  • Vineyard & Winemaking Notes

    Classical red vinification. Fermentation occurs in contact between skins and must for around 8-12 days at controlled temperatures of 82 F in order to extract more colorant substances from the skins as well as tannins and aromas. To respect Vegan vinifcation we don’t use any byproduct of animals to clarify and stabilize the wine. Once the alcoholic fermentation is over, we proceed with the malolactic fermentation.

    Ideal with veggie burgers, grilled vegetables, hearty soups, pasta dishes with tomato based sauces and dark chocolate and walnuts.

  • How to Serve

    Serve at 60 – 64 F in clear, Large “Bordeaux” Glass.

  • Conservation

    The bottle should be laid horizontally in a cool, dark cellar.

THE REGION

Blessed with consistently bright sunshine and reliably moderate rainfall, Sicily's classic Mediterranean climate is ideally suited to the production of excellent wine grapes. The magic is in the fertile soil and Sicily's long, cloudless summers – with humidity but virtually no rain from June until harvesting in late August – two factors which make Sicilian vintages remarkably consistent from year to year.
